Satisfy the Body & Boost Your Mood With This Gut-Friendly Avocado Toast 

Avocado on sprouted grain bread offers healthy fats and complex carbs perfect for an energizing snack post workout or any time of day.

Avocado toast has become one of my favorite healthy snacks. Not only is it easy to throw together in a pinch, but it also leaves me feeling satisfied and content from the balance of healthy fats and complex carbs.  

My healthy trick is to choose a lower glycemic, sprouted grain bread as the base and build from there. Sprouted grain bread is a great option for anyone who doesn’t want to remove bread from their diets (let’s be honest, bread is too delicious to give up) but wants a more healthful option. In general, sprouted grains will have more fiber, protein, and vitamins. You may also experience less tummy-bloating after enjoying sprouted grain bread versus conventional bread.  

After toasting your bread of choice, spread some ghee on top. Ghee is clarified butter… but to all of my dairy-free friends, don’t let the word “butter” scare you off just yet! Ghee is created in a way that removes the milk solids which will consequently remove the casein and lactose. If you would like to use an alternative to ghee, you can use solid coconut oil or your favorite butter replacement.  

Top your buttered toast with mixed greens for extra vitamins and nutrients. If you like a pepper-y bite, reach for arugula. If you like a milder taste, choose spinach.  

Next, add your sliced avocado half. You can also mash the avocado if you prefer a softer texture but I love the ease of putting the whole sliced avocado half right on the toast.  

Finally, top with your favorite herbs, spices, salt, and olive oil. I choose red pepper flakes for some heat, black sesame seeds for extra fiber and protein, pink Himalayan salt, and a high-quality olive oil which is anti-inflammatory and a great source of healthy fats. You can also get creative with different flavors and textures. Some of my other favorite additions are homemade pesto, roasted red pepper hummus, and kimchi.  

Avocado toast is a wonderful snack to enjoy midday or post workout. It will leave you feeling fueled from complex carbs, satisfied from healthy fats, and will promote healthy digestion from the fiber in the sprouted grains and greens.

  1. I’ve enjoyed adding Fenugreek sprouts and maybe even a sprinkle of feta for a midday enhancement to my avocado toast. In the morning, I sometimes add a meyer lemon olive oil that’s so delicious- a lovely, brightening zing!
